"Never cook with extra virgin olive oil, it has a low smoke point" is one of the most repeated pieces of kitchen advice — and one of the least accurate. Here's what actually happens when EVOO meets heat, and the one situation where the advice is genuinely right.

Where the myth comes from

Smoke point tables online often list extra virgin olive oil at 160–190°C, well below refined oils. Those numbers are usually measured on generic, industrially processed EVOO with high free-fatty-acid content — not on a fresh, low-acidity oil. Musai's October 2025 harvest tests at 0.24% acidity, well inside the 0.8% legal limit for "extra virgin," and low-acidity, fresh EVOO reaches closer to 200–210°C — comfortably above what sautéing, roasting, and most stovetop cooking actually require.

What actually degrades an oil under heat

Smoking isn't really the number that matters day-to-day — oxidation is. Heat gradually breaks down some of the polyphenols and unsaturated fats that make extra virgin olive oil distinct from refined oil, whether or not the oil has visibly started smoking. That's a real, gradual trade-off, not a cliff you fall off at one specific temperature.

Practical read: a fresh, low-acidity EVOO like Musai handles pan-frying, roasting and most home cooking without issue. It's not the right choice for deep-frying at 200°C+ for extended periods, or for repeated reuse of the same oil — for those, a neutral high-heat oil is genuinely the better tool, and saving the EVOO for something where its flavor and polyphenols actually show up is the better use of it anyway.

Where the "never heat it" advice actually came from

Independent smoke-point testing collected by aboutoliveoil.org found that high-quality extra virgin olive oil consistently measures in the 190–210°C range under real conditions — well above the 160–190°C figure that keeps circulating online, and comfortably inside the temperature window for sautéing, roasting and most home cooking. The same testing found EVOO's polyphenols measurably slow oxidative breakdown during heating compared with more neutral oils, which is a large part of why culinary researchers increasingly treat oil stability under heat, not just its smoke point on paper, as the more useful number.
