"Cold-pressed," "first extraction," "premium" — none of these terms are independently verified. A Certificate of Analysis is. Here's how to read one, using Musai's own report from the World Olive Center for Health, Athens, on the October 2025 harvest, line by line.
Acidity — the legal line for "extra virgin"
Free fatty acid content, expressed as a percentage of oleic acid. Below 0.8% is the legal ceiling for "extra virgin"; below 0.5% is generally considered genuinely good; below 0.3% is excellent, and usually only achievable from fresh, undamaged, promptly-milled fruit. Musai's harvest tested at 0.24% — comfortably inside the excellent range, not just the legal one.
Peroxide value — a freshness and oxidation marker
Measured in milliequivalents of oxygen per kilogram (meqO₂/kg), this tracks early-stage oxidation — essentially, how much the oil has started to go rancid, even before it's detectable by smell or taste. The legal limit for extra virgin is under 20; Musai's harvest tested at 6.00, well within a range associated with a genuinely fresh oil rather than one that's been sitting in a tank for a long time before bottling.
K232 and K270 — the UV-absorbance numbers
These two figures (K232: 1.877, K270: 0.187 in Musai's report) measure how much light the oil absorbs at two specific ultraviolet wavelengths. In plain terms: K232 tracks primary oxidation products, K270 tracks secondary ones, including markers that can indicate an oil has been refined or blended with refined oil rather than being a genuine first extraction. Both numbers well under their legal ceilings is one of the more reliable signals that an oil is what the label claims.
Total polyphenols — the number worth asking for
This is the figure fewest producers publish, because it's the one that most directly separates an ordinary extra virgin from an exceptional one — and it isn't required on any label. Musai's 972 mg/kg sits well above the range typical of commodity or blended olive oil (often under 200 mg/kg), and the oleocanthal + oleacein sub-measure (159 mg/kg) is specifically what's behind the peppery, throat-catching finish that tasters associate with a "serious" extra virgin.
The takeaway for buying any olive oil, not just Musai

Why so few bottles show you this document
Testing for a full chemical panel — acidity, peroxide value, K232/K270, oleocanthal and oleacein specifically — costs real money per batch and isn't legally required for the "extra virgin" label. An independent UC Davis study, summarized in a public fact sheet from aboutoliveoil.org, found a majority of imported oils sampled from US retail shelves failed to meet international extra virgin standards on sensory or chemical grounds — not necessarily fraud in every case, but proof that "extra virgin" on a label and "independently tested extra virgin" are two different claims. The EU regulation behind the polyphenol threshold
The 5mg-per-20g hydroxytyrosol threshold referenced throughout this Journal comes from a specific piece of law — Commission Regulation (EU) No 432/2012 — one of a fairly short list of EU health claims tied to a specific measurable compound level rather than a food category in general, which is part of why a lab report, not just an ingredients list, is the right document to ask for.
